Beef soup with dried apricots
Original soup with a pleasant sweet-sour taste that gives apricots. My daughter liked it, but husband was not happy. Called it "Soup with fruit." Apparently, this is not a man's soup. Although my son liked it. Meet and you can judge for yourselves. Ask my the kitchen.

Ingredients

  • Beef

    500 g

  • Potatoes

    4 piece

  • Onion

    1 piece

  • Dried apricots

    150 g

  • Pasta

  • Tomato paste

    1 Tbsp

  • Melted butter

    1 Tbsp

  • Spices

  • Carrots

    1 piece

  • Dill

Wash the meat, pour 2 litres cold water, bring to boil, remove the foam. Salt. Simmer at a very gentle boil (about 1.5 hours). Ready to remove the meat, strain the broth. Here's a transparent Golden broth we got.

Divide the meat into slices, cover it to not zavetrilos and set them aside.

Carrots and onions clean, wash. Carrots cut into strips, onion - half rings. In a pan melt the butter and fry the onion until transparent.

Add the carrots and saute all together for a few minutes.

Add the tomato and continue frying for several minutes.

Cut the potatoes into pieces.

Wash apricots and cut in half, very large - into quarters.

To cook small makaroshki.

In the boiling broth to put potatoes, bring to boil and cook 5 minutes. Pour makaroshki and continue cooking.

When the potato is almost ready, add the browned vegetables, meat and dried apricots, Bay leaf, pepper and salt. Bring to boil and remove from heat. Let the soup to infuse for 5-10 minutes under the lid.

Pour into soup bowls, sprinkle with finely chopped dill and serve. If you want you can put in a plate sour cream. Bon appetit!!!
