Cooking
Using a blender or coffee grinder to grind walnuts.
Separate eggs into yolks and whites. Beat the egg yolks with the sugar until the weight increase by 4-6 times.
Separately beat the whites to a lush resistant foam.
Mix 2 tablespoons of whipped egg whites with yolks. Add to the same chopped walnuts and mix well.
Gently combine this mixture with the remaining proteins, stir movements from the bottom up, as if wrapping the dough in proteins.
Spread the dough on the baking sheet, covered with baking paper. Bake in preheated oven 20-25 minutes at a temperature of 160 degrees.
Remove the nut cake from the oven and quickly roll the roll together with paper, allow to cool in this condition.
Preparation cream. 50 grams of sugar to burn through in a pan until obtaining a caramel. Coffee dissolved in 70-100 ml of boiling water, and add it to the burnt sugar (be careful!). Boil down this liquid on the fire to mass produce a thick consistency.
Continuing to whisk, pour the boiling coffee mix. Beat for another 3-5 minutes.
Roll roll, fluff coffee cream (leave a bit to smear it on the top) and again twist, but without the paper.
Finely chop with a knife, 100 grams of walnuts and sprinkle them ready to roll. Bon appetit!
