Cheesecake
Today I want to offer You a recipe of our favorite cheesecakes. Recipe found at Irina Khlebnikova a few years ago and bake them to this day. Cheesecakes are gentle, soft, very delicious and always fly with a Bang!

Ingredients

  • Flour

    500 g

  • Water

    200 ml

  • Sugar

    65 g

  • Butter

    21 g

  • Cheese

    400 g

  • Yeast

    1 tsp

  • Chicken egg

    1 piece

  • Sour cream

    3 Tbsp

  • Vanilla sugar

    10 g

  • Salt

    0.333 tsp

First prepare the dough. Yeast dough I kneaded in the usual way, but You can do this with a bread machine. So, mix flour with yeast, add parts warm water and knead the dough.

The finished dough cover and leave in a warm place for 3 – 4 hours for fermentation. The finished dough will look like this... porous with such "strings."

To the yeast mixture add the remaining water, salt, sugar, curd 75 grams and knead until smooth.

Add the remaining flour and knead a soft dough. Knead the dough for a few minutes, then add in small pieces of softened butter (margarine). Knead until smooth, rounded and cover it with a towel, leave for 1-1,5 hours

Coming up abenaim dough well, knead a little and leave to rest for 30 minutes.

Now you need to divide dough into pieces, I have them weighed, if no weights, You can split approx. I was divided into 12 equal parts. The weight of each piece 70 gr.

Pieces of dough cover with film and leave for proofing for 10-15 minutes. Then roll out the bun into a round layer and cut a Cup cake. The remaining edges are stretched into a long rope and twist the flagella

Meanwhile, make the filling. For the filling RUB (I rubbed through a sieve) cheese, add sour cream, sugar and egg. Mix all until smooth. If the filling seems runny, you can thicken it with flour.
