Fish cutlets in Japanese
Tender, juicy, flavorful, cooked from the simplest fish like Pollock. Very airy, more like even on pancakes. The recipe is from the book "Masterpieces of world gastronomy".

Ingredients

  • Fish

    500 g

  • Flour

    1 Tbsp

  • Chicken egg

    4 piece

  • Dry white wine

    1.5 Tbsp

  • Sugar

    1.5 tsp

  • Vegetable oil

    3 Tbsp

  • Spices

Fish fillet mince (I grind up in a food processor).

Add in minced fish flour, egg yolks, wine (for the recipe you need to take dessert, I took a dry white), salt and pepper.

Separately, beat whites with sugar.

Put proteins in the meat, gently stir. Is a light, airy mass.

Heat the frying pan with vegetable oil, spread a spoonful of our burgers-pancakes, fry on both sides until Golden brown.
