Cheesecake-beauties and not only
Before marriage, I lived a long time in the hostel. Then, who knows, 40 rooms, one open kitchen with 4 plates. Sometimes, to boil the kettle had to stand in line! And that's something to bake, and speech could not be allowed the ovens to be - and that's it! So my dream all these years was to have a kitchen with good oven, and when it's my husband appeared (and kitchen, and an oven), it was found that a Baker out of me... Well, and the dough is set, and the oven cakes I was taught abdeidna my friend Natalia (at the time a dough mixer at the bakery). And today, as 20 years ago, I taught my daughter to make scones and cheesecake. So, it is our work together! Look!

Here, to begin with what we baked.

The basis of good baking a good flour and good yeast. Many years I use this flour and yeast SAF-Moment.

For starters, I always yeast breed in warm water with addition of sugar (8 tablespoons). Sometimes the date is good, the yeast was old, then, I ruthlessly discarded. Good pastries and such yeast should not wait.

Good (fresh) yeast rise for 15 minutes.

Then separate the whites from the yolks (3 whole eggs go into the dough + the whites from 3 eggs).

Eggs, mashed butter (in a pack of 180 grams, rather it is spread as it melted instantly) and approached the yeast pour into a large pan (I have 7 liters)

Flour in the dough is that 16 of these glasses (total 2 kg 100 gr). In one glass 150 gr.

Yeast was dissolved in 700 ml of warm water. Salt added at the end of the bookmark, flour (salt quickly "eat" the yeast). Salt - 2 tablespoons with a slide.

And begin to knead the dough. Knead it until then, until it is well behind the walls of the cookware and to come unstuck at the hands (if necessary, you can pour more flour, but little by little). It should not be cool! This point is very important! Otherwise, the dough will not rise for or be "soggy"! And by the time the dough knead it with your hands, as taught by Natalya, to the third pot! It is about 20 minutes.

The dough is kneaded, put it in a warm place for 1 hour. After 30 minutes it is very well risen, and we abenaim. This is done in order to release the extra air.

And in the meantime we prepare the filling for cheesecakes - cottage cheese. We had 1 pack of regular cheese and 2 packs of curd mass with raisins and dried apricots + 1 egg

All this is well split with a fork and also put in a very warm place (the cheese will be warm and it will be easy to spread on dough)

Through the hours of kneading the dough finally came (it was only 1 hour) and we butchered it. Each cut up as he wants and knows how we twist balloons. Well involved and approached the dough makes such a distinctive sound, it seemed to be in his arms!

Then each ball of dough is pressed by hand and immediately spread on a greased baking sheet. The deepening for the filling in the cheesecake make the usual kartoffelsalat (it is in any case not wet with oil, otherwise the dough will stick to the bottom of this Malki and will bend!)

Spread cottage cheese slide (again, the cheese should be warm and soft)

While I spread the filling, Nastya fork whipped delayed 3 egg yolks with a small amount of vanilla sugar

And grease a cheesecake (they have stood there for about 10 minutes). In any case, do not lubricate the dough just before planting in the oven - sit down! Tried and tested! And put the sheet in the oven.

And daddy's buns with sugar sprinkles. If the pastry starts to burn, immediately put in oven pot or pan with cold water. The water instantly starts to boil and steam does not give the dough to burn! After baking, the bottom of the cheesecake should be that way.

Here's what we managed to bake 4 hours. However, some have a little dragged cheesecakes!

Every day for our little family of 3 we buy 2 rolls of this bread. It is worth it, if you buy directly in the bakery, 14 rubles in the store for 18 rubles. But because you want and cheesecakes, and muffins, with their piping-hot!
