Description

Jam dogwood berries (seedless)
I remember as a child my grandmother cooked from dogwood, but tedious rubbing through the sieve has always terrified me, so in my grown-up life itself to do do not risk. And then the husband went shopping, and as a fruit-berries brought dogwood. Eat it raw, abandoned everything, including the perpetrator, that had yet to recall the jam and do searches on the Internet. So I found on a recipe site, where wipe is not necessary, and at the same time spit out the bones is not necessary. With all this, the process of excavation pits will not require a lot of time and effort.

Ingredients

  • Dogwood

    1 kg

  • Sugar

    1 kg

  • Wine white semi-dry

    1.5 cup

Cooking

step-0
Dogwood berries wash, remove leaves and stalks, if any.
step-1
Remove the bones. The process is not quite difficult. For this we need a regular Cup. His bottom razdelyaet berry and quietly take out the bone. The process is similar to how you can remove the pit from olives. To further facilitate the berries can be pre-freeze and again to unfreeze, but then they will be less to keep the shape (I tried 1\3 of berries to process this way).
step-2
Prepared berries covered with sugar, stir and leave for a couple of hours to drain the juice, but a lot of it is not to be expected.
step-3
Then add the wine, who's afraid of you and water but the wine adds spice, and the alcohol will evaporate during cooking. Put on medium heat and bring to the boil, then allow to simmer for 5 minutes, turn off heat and leave until cool. I usually continue the process the next day. Do these two or three approaches. If you like liquid jam, then stick to one approach and add 1.5 St and two liquid, and let simmer for 20 minutes. Then place the jam in sterilized jars, twist and wrap until cool.
step-4
The jam becomes quite thick, you can spread on bread or used in stuffing during baking, while personally, I really like exactly what fall berries.
