Cooking
I took a number of ingredients into a pot of 3.5 liters. Begin to prepare the soup ahead of time. A glass of white beans thoroughly rinsed, cover with cold water and leave for 5 - 6 hours at night. Boil until tender.
Parsley, only the leaves, and 1/4 of the onion ruthlessly crushed and, together with egg and seasoning, add to the mince. Salt. The idea of adding meatballs in parsley shamelessly steal from Luba (Cranberry sugar). For which many thanks to her!
Minced carefully "knead" and shape the meatballs the size of a walnut.
Prepare the vegetables. Peel the potatoes and slice.
Remaining onion and parsley finely chop. Carrots grate on a coarse grater. Fry in 1 tbsp oil for 4-5 minutes
And fry them separately for 3-4 minutes
In a pot of boiling water, drop the meatballs. After boiling, carefully remove the foam and salt to taste. Then add the potatoes and cook for another 5-7 minutes. Finally, came the turn of roasted vegetables and mushrooms. And leave the soup to cook until potatoes are done. At the very end add the beans, bring to a boil and turn off the heat under the pan. The soup is ready. :)
