  • Raisins

    1 cup

  • Figs

    1 cup

  • Brown sugar

    2 cup

  • Lemon juice

    1 Tbsp

  • Water

    3 cup

Cooking

step-0
Dried apricots, raisins and figs are carefully washed, dried, figs have to remove the tails from the stem. All cut into small pieces (except for the raisins, I did not cut). To use the meat grinder is not advised, as our goal is a beautiful jam, and not a homogenous fruit mass.
step-1
Now you need to boil the syrup for jam. In a saucepan pour the brown sugar (I had Demerara), white sugar, pour water, put on medium heat, bring to a boil.
step-2
The syrup will turn brown due to the use of cane sugar, it is normal and even good because it indicates a high quality of sugar. I foresee a question: "Why can't I use the jam only brown sugar?" Answer: if we use only three cups of cane sugar, the strong molasses flavor can kill the flavor of dried fruits, and we do not need. Add to the syrup the lemon juice.
step-3
Add to the boiling syrup, chopped dried fruit, stir and cook on a medium heat, stirring occasionally, about 20 minutes, until transparent pieces. Our jam is ready. Wait until it cools down, and eat with pleasure.
step-4
Can tea - coffee - bread - toast. You can, as a filling in a sweet pie. If you intend to keep for a while, close the sterilized plastic cover and put in the pantry. Enjoy your tea while fasting!
