Instantly marinated eggplant
I love this recipe. Quick, tasty, useful. These eggplants are very delicious warm or cold.

Ingredients

  • Eggplant

    3 piece

  • Olive oil

    2 Tbsp

  • Soy sauce

    4 Tbsp

  • Honey

    1 Tbsp

  • Lemon juice

    3 Tbsp

  • Greens

    1 coup

  • Chili

    0.5 piece

Eggplant I this time quite small, their total weight no more than 300 grams. Cut them in half and boil for a couple until soft. Depending on the type and size it will take from 10 to 30 minutes.

Greens you can use any: parsley, cilantro, mint, Basil. But better than that was just a mix of herbs, it tastes better. So, greens chop not very finely, Chile cut into thin strips. The amount completely depends on Your preference. Mix in a bowl oil, honey, soy sauce, lemon juice, chilli and herbs.

The finished eggplant is slightly cooled, cut into fairly large slices, and immediately dressed with the marinade. All! The dish is ready!
