Potato and cheese souffle
It is fragrant, tender, melt in your mouth souffle can be served as a garnish, and as a separate dish for a snack. In this case it is prepared in the form of small pellets, however, can use small muffin tins or a large baking, and then cut the marshmallows into cubes and serve on skewers. The recipe for this dish was posted on the website in the 2009 user Surprise called "Potato-cheese meringue" and is illustrated with me in the framework of "Coloring". The dish is named me in honor of the author and after the surprise that this recipe gave me: according to the title, it was meant to be meringue. But, apparently, was just mixed up the terms "meringue" and "souffle".

  • Dill

  • Green onions

    1 Tbsp

  • Cheese

    100 g

  • Chicken egg

    2 piece

  • Butter

    30 g

  • Lemon juice

  • Seasoning

  • Salt

Cooking

Boil the potatoes until tender and mash to smooth puree, adding hot cream. Add salt to taste.

Finely chop the sweet pepper, dill and green onions.

Add the chopped peppers and herbs in mashed potatoes, sprinkle with seasoning. In this dish I suggest to use a seasoning for dishes of cheese and potatoes. As a rule, it consists of a mixture of peppers (paprika, red, black, white), nutmeg and dried garlic. This seasoning will give a brightness and piquancy to the flavor of this soufflé. No spice soufflé will turn out bland.

Now add to the potato mass grated on a fine grater cheese and egg yolks.

Separated egg whites, beat in a solid foam, adding a few drops of lemon juice.

Combine beaten egg whites with the potato mixture and gently stir until smooth.

Preheat the oven to 180 degrees, vystelim a baking sheet baking paper, lightly grease it with butter. Spread the potato mixture in small "pancakes" at a distance of about 2 cm from each other.

Grease the top with melted butter. Put into the oven for 15-20 minutes. During this time, the cream will rise and slightly browned.

Finished cakes put on a plate and served hot or cold.
