Cooking
Peel the onion and cut it in half rings. The plum and blackthorn remove seeds and cut arbitrarily. The currants I picked up in a mixture of red, white and black. Currants and gooseberries have me frozen, I'm half an hour before cooking, took them out of the freezer.
In a pan heat the olive oil, spread the onions and sugar and on medium heat cook the onions about 15 minutes without cover stirring occasionally. During this time is supposed to be caramelized onions.
To the onions add the berries, stir. Pour in the red wine vinegar, bring all to a boil and uvarivaniem the mixture on medium heat for 10 minutes without a lid, stirring occasionally.
Add sweet soy sauce TM Kikkoman, continue to boil the jam for another 10-15 minutes or until desired consistency.
After boiling you should get a thick jam, drops from the spatula. Taste for salt-sugar. If additional salt or sugar, proverjaem the jam for another 1-2 minutes. I had enough of that I indicated in the ingredients list.
Put hot jam into a sterilized jar, cover with a lid. Let cool completely at room t and stored in the fridge.
