Cooking
Whisk the egg yolks with the white sugar, add soft butter (or margarine) and vanilla, all well mixed, add the flour and baking powder quickly knead the dough (it will lipoate) and send it in the fridge, wrapped in foil, for 30 minutes.
Chilled divide the dough into 4 parts, each part roll into a circle with a diameter of 26 cm (do it better on parchment), prick with a fork.
Egg whites whipped in a solid foam with a pinch of salt. 1/4 protein mass spread on cake, sprinkle top with sugar and 3 tbsp almonds - 2 tbsp
Cakes bake at t 180* until light brown. They are very fragile, so carefully remove from the parchment was already cold. We have four ruddy crust. Stack them on top of each other is not necessary, before assembling the cake, let it cool down "alone."
Now prepare the Apple filling: peel apples, cut into cubes, pour sugar, pour the juice (50 ml left) and cook until boiling, dilute the starch with the remaining juice, pour in the boiled apples and a little proverjaem (we need whole blocks). Cool.
Cream: sour cream mixed with cream and whisk (the recipe without the sugar), cream will give a sweet, sour acidity, but if you have a sweet tooth, add sugar to taste. Start the Assembly of cake: on a platter put the ring from the form, put the first cake layer, top with 1/3 of the cream.
On top of the cream, 1/3 of the Apple filling.
The last cake of the cream is not covered. Give the cake soak, I left for a couple of hours on the table, remove the ring and sprinkle with Boca crumbs left over from the cakes (I have breadcrumbs turned a little, so I added cookies and nuts).
The top of the cake sprinkle with powdered sugar and refrigerated the cake for several hours. And then... enjoy the heavenly taste, crisp, tender, fresh!
