Love healthy, tasty and easy to prepare dishes, and I love the combination of carrots and rye flour. So I decided to combine both my weaknesses and bake these bright, Sunny sweet cookies! What in them unusual? 1) They contain the minimum amount of oil. 2) Wheat flour we replaced by more useful rye and oats. 3) In their composition You won't find sugar. Agree, nice advantages.

Cooking
Dates cut into small cubes.
Peel the carrot and grate on a fine grater.
Squeeze the juice of one orange. It is important that the juice does not hit films, otherwise the cookies will taste bitter. Add to the carrot juice and sunflower oil.
Add eggs, rye and oat flour, cinnamon, mix thoroughly. In the end, add chopped dates. Stir again. Tablespoon put the dough on with a silicone Mat (or parchment) baking sheet. The Mat/ parchment needs to be oiled. To shape the cookies.
