Baked eggplant with cream sauce and salsa
Recently fell in love with eggplant. This option I am very pleased, try it! Source Lara with LJ.

Ingredients

  • Eggplant

    4 piece

  • Sour cream

    250 g

  • Garlic

    4 tooth

  • Parsley

    0.333 cup

  • Tomato

    3 piece

  • Onion

    1 piece

  • Olive oil

    1 Tbsp

  • Salt

  • Black pepper

  • Chili

    1 piece

Eggplant cut into two pieces to make cuts and send in the preheated oven for 25-30 minutes (until tender).

To prepare sour cream sauce by mixing sour cream (yogurt), chopped parsley (dill) and passed through press the garlic.

Add salt and pepper (I have red) to taste.

To prepare tomato salsa. For this finely chop the onion, hot pepper, garlic. Tomatoes cut into cubes.

Season with olive oil, salt and pepper to taste.

Once the eggplants are ready, remove a small amount of pulp.

Filled with tomato salsa and sour cream sauce.
