For dinner tonight made this dish so everyone liked that now I will prepare more than once. Very hearty, tasty vegetable stew with chicken liver and rice. Stew is not only delicious, but also a real storehouse of vitamins! Such a great dish can be served not only on weekdays but also on a festive table!

Cooking
Chicken liver wash, cut and put in a deep saucepan, season with salt and pepper, add 2-3 tbsp. of vegetable oil and a little water, put on fire and saute for 3-4 minutes.
Eggplant cut into rings, and if they are large, then half-rings. Put in a saucepan on the liver, season with a little salt and pepper.
Eggplant sprinkle finely cut onions.
On the onion put half of the washed rice.
For rice - bell pepper, cut into thin strips. Lightly salt and pepper.
On pepper put the remaining half rice.
The next layer is zucchini, cut into thin plastinkami.
The zucchini place the tomatoes, cut in half or 4 pieces, cut down. Sprinkle with garlic, cut into thin slices. Pour the remaining oil. You can add a little more boiled water, but just so you don't burn the bottom layer! Season with salt and pepper.
Sprinkle with chopped parsley, cover the saucepan with a lid and simmer on low heat for 25-30 minutes. You don't stir. After 20-25 minutes, open the lid, a spoon lightly push the content, if there is still liquid, it is still a little hold on fire.
You can serve and eat. Delicious, hearty and vitamin! And looks very nice on a platter!
