Cooking
To prepare the Focaccia mineral water we will need a simple set of products; flour, a highly mineral water (room temperature), fresh compressed yeast, sugar, salt, olive oil and 2 sprigs of fresh rosemary and coarse sea salt.
Yeast mixed with 2 tbsp flour and sugar, all diluted with 50 ml of water, as it should stir and set aside to ferment for 15 minutes.
After 15 minutes add the yeast to the remaining water, sifted flour, salt and olive oil and knead the dough. Knead the dough for about 10 minutes, you can do it both manually and with the help of kneading. Put in a large bowl greased with a little oil, cover with film and put in a warm place for 1 hour (I put it in the oven, is included in the "Light").
After an hour the dough is well risen and increased markedly in volume.
Put it on the work surface, covered with flour and divide into 2 parts. Each piece of dough with your hands to stretch to form a rectangle. Fold in half (turning to her). Then be rotated through 90° and then doubled.
Cover both pieces of dough, folded so, a clean towel and leave for 10 minutes.
After the specified time, hands (you can help yourself with a rolling pin) to form 2 of the Focaccia. Lay them on a sheet of baking paper, cover with a towel and leave for 1 hour.
Included the oven to heat up to 230°C together with the pan, which will bake the Focaccia. After 1 hour, the pellet out of the test went like this... plump fingertips are doing on the surface of each Focaccia dimples. In a small Cup mix a little water and olive oil. This mixture lubricates the surface of both focuss.
Finally, lightly sprinkle large crystals of sea salt, and arbitrarily put a few "needles" of rosemary. I this time on the second pour will put the halves of cherry tomatoes...
Gently move both the Focaccia on a sheet of baking paper on a baking sheet and bake in a hot oven for 13-15 minutes until Golden brown. Allow to cool on a wire rack and serve!
