Since childhood, the pork is not liked, but when my sister was introduced to the traditional recipe pork her mom, I have the attitude of this dish changed. The meat is tasty, juicy and the cooking process, in my opinion, the most simple. Now it is both festive and everyday food in my house.

Cooking
I took the so-called beast with a small amount of fat, rubbed with salt and pepper on both sides, but you can take any other part
Stuffed with garlic and carrots with one hand
Tight tied from all sides with a thick thread
Put in a roaster (in a cast-iron pot), poured cold water (it can be a little salt) to cover the meat halfway, put on fire and brought to a boil, then turn meat to other side (this procedure can be repeated in the further cooking process) and cover, making a fire is minimal, to barely boiling water, and cook 90 minutes
If after 1.5 hours the water has not boiled away, to make the fire hotter so the water evaporates and only the bacon fat in which the meat is fried on all sides
To maintain the integrity and facilitate the process of slicing I cool first and only then remove the skin and cut into already cold. Bon appetit!!!
