Thick pumpkin soup with meatballs
I wanted to cook something tasty and useful. And turned out this soup. Meatballs I decided to try a wonderful cook Alia (alarm clock). For her magical cheese-chicken balls her separate thank you!!! :) You are all invited to lunch!! :)

Ingredients

  • Pumpkin

    1.7 kg

  • Water

    1 l

  • Potatoes

    3 piece

  • Onion

    1 piece

  • Salt

  • Cream

    200 ml

  • Chicken fillet

    2 piece

  • Cheese

    200 g

  • Cheese

    2 Tbsp

  • Vegetable oil

    2 Tbsp

Wash pumpkin, peel, remove seeds and cut into cubes (2x2 cm). Part (about 3 handful) to postpone, to put out the rest with 2 tbsp water until soft.

Cooked pumpkin mashed with a spoon (I cooked in a slow cooker, so use a wooden spoon). By the way, in a slow cooker, I usually cook on the "Baking" for faster turns. :)

Potatoes wash, peel and cut into small cubes. The pumpkin puree add the chopped potatoes and pumpkin. Pour about 1 liter of water. Mix well.

While the potatoes and pumpkin are cooked, you can do meatballs. For this chicken fillet grind in a meat (I did this in blender, but you can use ready-made stuffing). To the chicken mince add the ricotta and grated cheese. Beat with a blender.

Hand and a plate on which we put the meatballs, brush with vegetable oil. Oil your hands of of ready-made minced meat roll into balls of a small size (I have about 3-4 cm in diameter).

During this time, the potatoes and pumpkin are almost ready. Add meatballs. Season with salt to taste and mix well.

Fry finely chopped onion until Golden brown.

Add the fried onions and cream soup, mix well. Again taste for salt. If necessary, it needs more salt.
