Cooking
4 teaspoons agar-agar to soak in 150 g of water for 1 hour. 4 apples (Antonovka is the best option for marshmallow, it has a lot of pectin - a natural gelling substance) to clean, remove the core and cut into quarters.
Bake apples in the microwave for approx 6-7 minutes (don't forget to cover, and then you will have to clean up).
Baked apples grind in a blender, add 250 g of sugar (I have a black cane sugar, can be plain white, then the marshmallow will be white), a spoonful of vanilla sugar (if vanilla, then a pinch) and again to kill blender. Leave it to cool down.
Agar with water to heat almost to boiling while stirring to dissolve. Add 450 g of sugar, bring to boil and cook 5-10 minutes, until the syrup begins to drag a thin thread from spoon.
Whisk applesauce with a mixer with half a squirrel for about a minute. Add the remaining half of the protein and continue whisking until the mixture will increase in volume, will brighten and become lush.
Syrup (hot but not boiling) in a thin stream add in the puree, whisk constantly - do not stop!
Beat for another 5-7 minutes, until the mixture will become very thick and will hold the shape.
While the mass is still warm, even hot, otkryvaem marshmallows using a pastry bag (or a file, cut off the tip). Do everything very quickly, because agar sets literally "on the go".
Do not touch the marshmallow day - allow it to stabilise and dry out. A day or two sprinkle with icing sugar and combine in pairs. Enjoy the forgotten flavor of our serene Soviet childhood.
