Description

Turkish bride soup
Ezo corbasi. A girl named Ezo lived in the early 20th century, the city of Anatolia in Turkey. She was renowned for her beauty. Parents Ezo without her consent, gave her in marriage to a young man who was in love with another woman. After years of loveless marriage she returned home. After a few years Ezo went out a second time married to a distant relative who lived in Syria. The girl does not have a relationship with the mother-in-law, far away from the homeland she really missed a mother. And in memory of my mom Ezo created this soup, which was later called bride soup or Ezo corbasi. Ezo was buried in Syria, but later, by agreement of Syria and Turkey Ezo were reburied in their homeland. This story became a legend on the plot which was filmed on cruel and unhappy fate of Ezo. Every bride before the wedding, preparing this soup to life was happy and the marriage is smooth. Decided to add already after him until he closed the recipe. Girls, I would call this soup a one-off. Cooked and ate - delicious! But if he could stand, bulgur swells greatly, and the soup becomes very thick. The next day it is almost like porridge. So for the future to make it not be!

Cooking

step-0
Here our products.
step-1
Melt the butter (you can do it directly in the pan if it with a thick bottom).
step-2
Fry the onions, sliced thin half-rings or cubes (whichever you prefer).
step-3
Add the tomato puree, lentils, bulgur and slightly put out.
step-4
Pour the broth, add the mint (I added a whole teaspoon, half seemed to me a little), pepper, salt.
step-5
Pour the paprika. When everything comes to a boil, reduce the heat to low and leave to stew until the lentils and bulgur are soft. All!
step-6
Stunning aroma of mint. Hearty, warming... Very tasty! However, when the soup stand, it is strongly thickens, apparently, bulgur swelled. So it was very thick, had to add more broth. But that being said, for an Amateur! If you cook the soup on the water, get lean or vegetarian option. Bon appetit!
