Cream soup of zucchini
Very quick and easy soup. None of my Pets have not guessed that zucchini soup. All agreed that it with mushrooms. And indeed, the soup has a slight "mushroom&am p;quot; taste. Very gentle.

Ingredients

  • Broth

    1 l

  • Potatoes

    2 piece

  • Zucchini

    4 piece

  • Garlic

    1 tooth

  • Onion

    1 piece

  • Vegetable oil

    1 Tbsp

  • Cream

    0.75 cup

  • Spices

  • Water

    1 cup

Heat 1 tbsp oil in a large saucepan over medium heat. Add coarsely chopped onion, crushed garlic, 4 large chopped zucchini 2 peeled and chopped potatoes. Cook for 5 minutes, making sure vegetables don't burn.

Add 1 liter of chicken broth (I did with the vegetable) and 1 Cup of water. Bring the soup to a boil, reduce heat and simmer 20 minutes, until the potatoes are soft. Remove from heat, leave for 5 minutes.

With the help of a blender or food processor turn the soup into a puree.

Return to heat, add 3/4 Cup cream, salt and pepper. Good warm up soup.
