Mushrooms to wash, to dry. Garlic cut into thin slices.
On medium heat, heat the frying pan with olive oil (about 6 tablespoons). Spread the mushrooms. Fry 1 minute on one side, then flip and fry the other side. So to turn over 2-3 times until mushrooms are browned on all sides. The mushrooms will give the juice, but that's OK, because the water evaporated. If the oil is all absorbed, then pour some more.
Add the garlic and thyme. All mix until the garlic is slightly toasted (about 30 seconds). Importantly, the garlic is not burned.
Add sherry and cook until it is almost all evaporated (about 1 minute). Season with salt and pepper.
Sprinkle with herbs. Bon appetit!
