Doughnuts with spiced sugar from Jamie Oliver
Donuts is my weak point, a recipe from Jamie different from those that are on the website, they are tender and flavorful, just melt in your mouth.. Hope you enjoy!

Ingredients

  • Yeast

    7 g

  • Sugar

    170 g

  • Flour

    500 g

  • Milk

    320 ml

  • Lemon peel

    3 piece

  • Orange zest

    2 piece

  • Butter

    80 g

  • Cinnamon

    1 tsp

  • Nutmeg

    0.5 tsp

  • Allspice

    0.5 tsp

  • Vanilla

Cooking

Vysypte yeast in a bowl, add 1 tbsp flour and 1 tbsp sugar. Pour in the warm milk. Put in a warm place for 15 min.

It took 15 min the mixture began to foam (love this process).

Mix in another bowl the flour, sugar, lemon and orange zest, and butter. Add the yeast mixture, mix slightly with a spoon and then knead with your hands to make a smooth ball. If the dough is too sticky, add a little flour.

Knead for about 5 minutes. Until it become soft and shiny. Cover and put in warm place (my oven a bit before I warmed up). Leave the pastry for 1 hour.

I went with Sonny to the street and only came back after 1.5 hours so the dough is very well risen:) Coming up ebonite dough to expel extra air, and it could rise again. Then the doughnuts turn out light and fluffy.

Roll out the dough on a floured surface to a thickness of 1 cm Glass cut out 25 circles. I used half recipe so my circles less)

Place on a greased tray (or baking sheet) at a certain distance from each other. Cover with a damp towel and leave for 45 minutes to rise (I only waited 30 min.).

Meanwhile, prepare the Spiced sugar : 100 g fine sugar, cinnamon, nutmeg, allspice, zest of 1 lemon and zest of 1 orange, a pinch of vanillin (Jamie points to the vanilla pod, cut lengthwise and remove the seeds).

When the donuts will fit, take a Chinese chopstick and make a in the center of each donut hole. Now you can fry.

In a deep saucepan, heat the vegetable oil. Fry on both sides. Ready donuts take out from oil with a slotted spoon (I - fork) and put on paper towel to rid of excess oil. Sprinkle warm doughnuts spiced sugar and eat immediately!
