Chocolate meringue cream
A delicious cream, ideal for different cakes or pastries. It's soft, fluffy and retains shape, suitable for decoration of desserts.

Ingredients

  • Sugar

    150 g

  • Egg white

    1 piece

  • Vanilla sugar

    1 tsp

  • Salt

    0.25 tsp

  • Lemon juice

    0.5 piece

  • Butter

    250 g

  • Dark chocolate

    125 g

  • Coffee natural

    1 Tbsp

Cooking

Beat the egg whites with sugar, vanilla sugar, salt, lemon juice until the sugar has dissolved completely.

Put the mixture in a water bath and beat until the meringue formation, that is, the mixture should thicken and become white and smooth.

Remove from heat and beat with a mixer to cool the meringue. Gradually add pieces of soft butter, continuing to whisk.

Separately melt 125 g chocolate in a water bath, let cool slightly and whisk it into the cream.

Add cold coffee. The cream is ready.
