Description

Cooking

step-0
I did half portions. Separate 6 egg whites from the yolks. To the yolks add the sugar and grind until they turn white. Then add the zest (I have orange and lemon) and stir.
step-1
To proteins add a little lemon juice and beat with a mixer until "hard" peaks (first, beat on low speed, gradually accelerating).
step-2
To the beaten yolks add the sifted flour and starch, then enter the melted butter.
step-3
Gently enter into the dough beaten egg whites using silicone spatula. Whip is not necessary! Put the dough in the form. I used silicone size 22 x 11 (don't forget, I made a half portion); if You have a regular, brush it with melted butter and sprinkle with flour or dry powdered sugar. Form to Bang on the table so the dough is evenly distributed. Put in a preheated 170 degree oven. Bake for 15 minutes.
step-4
This recipe uses peeled blanched almonds. You can buy ready, but you can do yourself. I chose the second option. It is necessary to throw the almonds in boiling water and leave for 3-4 minutes. Drain nuts in a colander, then shift for a few minutes in cold water or a bowl of ice. Re-drain the water and dry with a towel. Clean (cleaned very easy). Leave the almonds to dry. In any case not warm it in the oven or microwave, we don't need the toasted almonds. I left to dry for a day near the battery.
step-5
Grind the almonds in a blender, add sugar and whites, mix well.
step-6
After 15 minutes, sprinkle almond crumb cake. Send in the oven for another 30-40 minutes. Honestly, I was worried that the cake will not rise. First, open the oven during cooking, and secondly, there is a heavy nutty topping. But everything turned out fine, he has grown up well. If someone is going through, maybe for reliability, add to the dough a little baking powder. But I and without it all came out. The finished cake to cool, then to get out of shape and cut.
