Here's a wonderful recipe fish pie. It is usually happy to try, even those who does not like fish cakes. The dough for this recipe turns out so tasty and tender that I use it for other pies.

Products for the dough must be well chilled. Sift the flour, add the chopped pieces of margarine, salt and cheese. All chopped with a knife into uniform crumbs. Then quickly knead with your hands stretch the dough, roll into a ball, wrap in cling film and put into the fridge for 2 hours (even at night). 1. From the stalk of leeks cut piece length with our fillet of salmon. Carefully split it into individual sheets. Drop them in boiling water and blanchere 3 minutes. 2. Delicately remove and immediately pour cold water. Spread on a towel a little overlap. Blotted with a tissue and a little dry on the towel. 3. Meanwhile, prepare the fillet. Wash it, dry it well with a cloth and put it on the bow. Pour pepper and lemon juice. Then wrap in leaves of leek (this step I forgot to take off, the husband got distracted).
4. Divide the dough into 2 parts. Roll out into rectangles of size a little bigger than our fillet. Spread on single layer fillet wrapped in a bow. Cut the dough into the shape of a fish, releasing the fish some distance. Edge grease egg white. 5. The second layer is also cut in the form of fish, cover them with a fillet. Edges tightly pressed fingers. On the "belly" and "back" make frequent incisions with a knife, simulating fins. From scraps formed eyes and a mouth and glue the yolk to the fish. On the "cheeks" of the spoon do the "gills". Across the "carcass" kitchen scissors make shallow incisions common, simulating the "scales". Greased pie with egg yolk beaten with 1 tsp water or milk and put in oven. Bake 40 minutes at 200*C. the Finished pie lubricated again with egg yolk and sprinkle with caviar. The latter is not required, it is a festive option.
However, I must warn you that sprinkle caviar is only if you are sure that the cake will be eaten quickly (e.g., guests). If it will remain for another day, eggs should not be used on the air it quickly dries and becomes rubbery, sticks to the teeth. Cake is very delicious and the next day not lose its flavor.
