I live in new York city, the products here are slightly different. Vegetables are not really such, to which I am accustomed in Russia. I go to the farmer's market, where you can find a variety of vegetables, often unusual color. I especially like the purple potatoes, carrots, which here is purple, yellow, white, green and crimson, and bright yellow beets. The veggies are all organic, very tasty. The unusual color is due to different varieties. As it turned out, carrot orange, in General, were bred artificially somewhere in the middle ages, but in nature, she met a variety of colors, the Yellow carrots are sweeter than orange and very tasty. In General, I decided to experiment and bought only the yellow vegetables except the purple potatoes. And made of them a yellow soup. Here they are.
I don't eat meat, so the soup will be vegetarian and even vegan, if you don't add the cream. A real vitamin cocktail! In a large pot I poured in olive oil and rubbed on a coarse grater, yellow beets and yellow carrots. Put it to stew on a slow fire. In a separate pan, I also poured olive oil, cut yellow tomatoes into halves, yellow bell pepper strips, squeezed the juice of half a lemon and also put it to stew.
When the peppers and tomatoes gave the juice, I put them in a large pot with the carrots and beetroot, cut to the same purple potatoes.
And poured the water. Then I put diced fresh cabbage, and a jar of canned giant white beans. You can, of course, and self-cook beans, but only this should be done in advance. When the water is boiling, I lowered the fire, salted and left for another 10 minutes, until the potatoes became soft. For decoration I cut a couple orange mini-carrots slices. At the end you can squeeze a couple of cloves of garlic, add the lemon juice and a little black pepper. The onions I did not add it because I don't eat it, but who puts probably worth it to fry along with carrots. You need to give soup to stand for ten minutes.
Serve with greens and sour cream and. Turns out very tasty vegetable soup. By the way, yellow beets taste gives a rich, yellow carrots - sweeter. Now I don't even want to cook the usual, red beetroot soup, so I like yellow!
