At no other time of the year in Austria, the holidays are not so solemn, as at Christmas time. Festive season begins in late November with the opening of the Christmas markets open in towns and villages throughout Austria, and working right up to the eve of Christmas. Austrian Housewives begin to prepare for Christmas as much as four Sundays before December 25. Preparing thoroughly: decorate the home, bake Christmas cookies, which is carefully hidden in large, usually metal boxes, and out of sight. Until December 25, anyone in the house is not allowed to conduct any tasting baked and there's a reason: Christmas cakes – small biscuits shortbread and gingerbread, which, that they disclose the full bouquet of your own taste, you need to pull the plug. In such metal or plastic boxes in a cool place biscuits and cakes can live to as much as 6 weeks! Some Housewives are distorted and bake up to 20 different types of cookies, but also ride all sorts of different chocolate truffles and boiled toffee. In Austria it is customary to give at Christmas chocolate and cakes. For the contest "new year tastes of the planet."

Cooking
Take roasted almonds, and in any case not cleaned from the husk.
Almond grind in a blender.
Whisk three whites to a solid foam, gradually adding powdered sugar. Immediately postpone separately 3-4 tbsp of the beaten egg whites separately for the icing.
Gently mix whites, almonds, cinnamon, vanilla sugar, almond essence, gradually adding flour. The dough will be sticky.
Wrap the dough in foil and put into the refrigerator for 30 minutes.
On floured table to lay out the dough, roll out with hands or rolling pin into the reservoir with a height of 0.5 cm, a cookie cutter to cut out stars.
On a greased and covered with paper baking sheet put the cookies and place in already heated to 150-160 gr. the oven for 10-15 minutes (do not desiccate).
Pull from the oven a baking tray, brush the biscuits with the remaining protein (which we pre-laid), and send in the oven for another 7-10 minutes to let the glaze dried.
Obtained here is full of cinnamon-walnut delight. These cookies can be stored in a tin in a cool place for several weeks. Have to be kept under closed cover in order to remain soft and retains its flavor.
