Marinated eggplant in Odessa
Great snack as for the festive table, and every day. Quickly prepared without much hassle. In the morning made the evening snack.

Ingredients

  • Eggplant

    1 kg

  • Pepper

    2 piece

  • Onion

    1 piece

  • Celery leaf

    1 coup

  • Parsley

    1 coup

  • Garlic

  • Sugar

  • Salt

  • Vinegar

  • Vegetable oil

And so, we take our eggplant (in Odessa call them sinenkie) peeled and boil for 10 minutes. In the process of cooking, add 2 tbsp of salt. Attention! Watch out to not overcooking.

Sinenkie until cooked, cut the peppers into strips, onion half rings, greens grind.

Proceed to the marinade. In the mixture of sugar, salt, vinegar and oil, add crushed garlic and stir. The marinade is ready.
