I want to offer You a recipe of spicy raspberry jam with tarragon and pepper. This jam is not really jam in the traditional sense, as the sweetness to tea, dessert. Sweet and salty, with a raspberry-caramel flavor, spicy and spicy, with a fleeting hint of garlic. He, like caramelized onions, is a great addition to meats. And perfect with cheese! Try it!

Cooking
Sort through the raspberries, folded into a saucepan. Add some water (30-50 ml), put on small fire and bring to a boil.
Young sprigs of tarragon (estragon), wash, tie in a bundle, shake off the water. A clove of garlic, peel, rinse and crush with the flat side of a knife. Add to raspberries and the garlic and the tarragon, cover the saucepan with a lid and leave for 10-15 minutes to raspberry soaked with spices.
On a pan for cooking jam put a sieve, put the raspberries. Tarragon and garlic, remove and wipe the raspberries with a wooden spoon or a potato masher through a sieve.
In raspberry juice to dissolve agar agar. mix well. Add sugar, salt, white wine vinegar and pepper mixture to taste.
Bring to boil until agar-agar is completely and evenly dissolved, boil for 3-5 minutes. Hot jam pour into prepared sterile jars, seal with sterile lids. Banks to turn over for 5-7 minutes upside down, then put the caps up, wrap and allow to cool completely.
Store jam in a dry, dark place.
Jam is perfect for cheese!
