Quince grape jelly
Examining on the balcony the remains of the grape harvest, was thinking how else to use it. First I wanted to make it into a juice and then add the agar-agar to jelly. But quince lying around too long already waiting in the wings, so I had the idea to cook the quinces in grape juice and Tagliavini it all. Came out not only delicious, but divinely delicious and beautiful. Quince engorged grape sweetness and color, and its rich flavor was diluted by a light wine note. Husband came home from work and seeing my creation, said, "what did You do to jam like Ancient Rome? There, too, everything was cooked grape juice". Now I have no doubt that in a past life I was a Roman :)

The grapes are to be cleaned of twigs, wash. I had mixed 4 varieties, light and dark, sweet and sour. You can use 1 variety, and you can even purchase ready to take juice, but then you need less sugar to put. Put the grapes in the juicer and get about 1 litre of juice (plus-minus 100 ml).

The quinces are cleaned from the hard core and cut into slices.

In a saucepan put the quinces and fill it with grape juice. Cook on medium heat. Add sugar gradually to taste. It all depends on sweetness of grapes. It might be less.

After boiling, turn down the fire to minimum and cook for about 1 hour. Quince will gradually change color from yellow to pink. The passage of time turn off the pan and leave to cool. During this time, the quince will cease to be acidic and gain sweetness from the grapes.

After complete cooling, the molded bowl in 100-150 ml of liquid from the jam and add 2 tablespoons of agar-agar. Stir and allow to swell for 15-20 minutes. During this time the jam again put to warm on low heat. You can still adjust the sugar, and when boiling, pour the mixture of agar and allowed to writing a rolling boil for 5 minutes. Pour in sterilized jars. After cooling, the jam will turn into a beautiful jelly.
