Peach pie with butterflies
Want to surprise your guests with something unusual? For example, a cake with butterflies. Then, you are welcome! This pie I baked in honor of the birthday of my girlfriend website Erosenko.

Ingredients

  • Flour

    2.5 cup

  • Butter

    200 g

  • Salt

    1 tsp

  • Sugar

    1 Tbsp

  • Water

    7 piece

  • Peach

    8 piece

  • Black currants

    30 piece

  • Brown sugar

    2 Tbsp

  • Yolk egg

    1 piece

  • Cream

    1 Tbsp

Cooking

In a food processor pulse the flour, salt, and sugar. Add butter, pulse for about 10 seconds.

Add ice water and continue pulsing for about 30 seconds. Divide the dough into two parts. Wrap in foil and place in the fridge for 1 hour or overnight.

On a lightly floured work surface roll out the dough to fit the form. Put into a form and flatten. Trim the edges. Place the form with the dough in the fridge.

Preheat the oven to 190 degrees. Put the parchment with a load in the form of peas or beans. Bake the pie for 10 minutes. Remove the parchment with the load and continue to bake for about 5 minutes. Let cool on wire rack.

On a sheet of parchment, lightly dusted with flour, roll out second half of dough, as pictured. With a special cushion to make cuts.

Stretch dough to desired size. Trim around the circle and make the dough round bezel and apply a circle test. The size should match the size of your form. Place dough-bars in the refrigerator while we cut butterflies with plunger or cutting.

Whisk together egg yolk and 1 tablespoon cream in a small bowl. Take out the sheet-bars from the fridge and lightly grease with a brush with egg mixture. Put butterflies on the rim of the lattice. Cool round for 20 minutes in the refrigerator.

Bake the bars on the inverted baking sheet until Golden brown, 20 to 25 minutes. The bars are baked faster than butterflies, so keep checking to avoid burning, put foil on the circle grid, as soon as you see that the grille is already browned. I recommend to prepare in advance a circle of foil. Butterflies to cover with foil is not necessary.

Peaches wash and peel.

Reduce heat the oven to 175 gr. Cut the peaches into 8 pieces. Place on prepared crust peaches and currants and bake in the oven for 30-35 minutes. Remove the pie. Cool, sprinkle with powdered sugar and cover the grill with the butterflies.
