The recipe was born thanks to the package of Mascarpone cheese, brought by the mother "on the fairing". I really wanted to use this cheese, so to speak, delicious. The idea to make a canape with red fish was born immediately, but could not come up with a base for sandwiches. In the end, decided to make crackers from rye whole grain flour. Recipe crackers invented itself, from the experience and read on the Internet. The result exceeded all my expectations. The crackers came out incredibly tender and tasty. In General, help yourself!

First sasalihan fish. Of course, you can take the ready salted, but I prefer to add salt myself. It's cheaper and tastier, and safer for your health (at least I know that fish a minimum of konservantov and other chemicals, only what "fed" the fish itself). On the sofa, it takes about 250-300 gr are ready fish. Else is eaten with potatoes or regular sandwiches. Fish for pickling clean, freed from skin and bones, cut into portions pieces. Make a mixture of 2 parts salt and 1 part sugar. In most recipes, salting salmon, salt and sugar offered to take in the proportions 1:1, but I don't like. Fish out markedly sweet. So the salt I take in two times more than sugar. Sugar is clearly needed. It makes the taste more delicate fish and it never turns out too salty.
On the bottom of the container, which will be salting the fish, pour the mixture of salt and sugar.
Put layer of fish, sprinkle with sugar-salt mixture, put another layer of fish, sprinkle with and so, until the fish run out.
Put the fish in a container in the refrigerator for at least 12 hours.
Start making crackers. Butter (or margarine) finely chop.
Add rye flour (I had whole wheat). Knead well with your hands.
Add the grated grated Suluguni. My chicken was salty, so salt to the batter I added. If You take the other cheese, then the sunflower dough.
Knead the dough, gather into a ball.
Put into the fridge in the company to fish for 15 minutes so that the flour gave gluten and the dough was frozen (became solid).
Now begins the hardest part of this recipe. Because I used rye, and even whole grain flour, the dough to work out quite heavy. It is not highly elastic, crumbly and sticks to the rolling pin when rolling. To form our cookies, you need dough in small pieces, remove from the refrigerator, sprinkle well with flour (so the dough is less sticking to the rolling pin) and gently roll out to a thickness of about 3 mm.
Cut out crackers with a glass or cookie cutter.
Cut cookies with a spatula put on the laid parchment baking sheet.
The last batter due to periodic mixing of flour in the rolling process turned into chips, which are generally not wanted "lepitsa" with each other. So I added a small piece of butter and vymenila. This has been "blind" a few cookies :)
Crackers pinned with a fork and bake it in the oven at 180-200 degrees for 10 minutes. From this amount of ingredients turned out to 40 crackers, 20 of which went to canapés.
Here are our finished and beautiful crackers! Pets and rye! Incredibly tender and tasty. Quite healthy and tasty snack. Because rye flour is ideal for those who are watching their figure. It is low in calories, extra fat and calories are not absorbed, but not the feeling of hunger. These crackers will go in "pure" form of coffee, tea, beer in the end, and as a basis for fast food restaurants canapés!
