Vasilopita and Fanouropita
Two recipes of traditional Greek pies which were kindly shared with me namesake, Larissa (papaki), long living in Greece. Vasilopita is a cake St Basil, the Greek Santa Claus. In it, according to Greek tradition, a coin is baked wrapped in foil. Who the coin in their piece will find that the whole year will be accompanied by happiness and success. Fanouropita - lightweight version Vasilopita (without milk and butter), baked the day of St. AG. Before cooking, you must go to Church, light a candle and pray. During cooking, make a wish and ask St. AG to perform it. Pie treat acquaintances and strangers, and when the wish comes true (and Larissa claims that it is necessarily true), re-bake Fanouropita in gratitude and share it with people. Two delicious cake of happiness in the New Year's eve. Be happy!

In the ingredients the letter "b" means - Vasilopita "f", respectively - Fanouropita. To avoid confusion, the steps will be repeated again a number of all ingredients. I baked these cakes in muffin pan, shape I have a small, so Fanouropita took half the norm of ingredients. The shape can be any round, square or rectangular, as I have. Let's start with Vasilopita. 2 eggs divided into whites and yolks, whip the egg yolks with 100g sugar. Add the softened butter (125 gr) and whisk.

250 grams of flour add 1 teaspoon baking powder, sift into a separate bowl. Alternately add liquid mixture to flour and 140 grams of milk, each time beating the dough.

Pour the dough in crushed toasted almonds, stir, then whipped egg whites and again mix gently, do not achieve complete mixing of the protein with the dough - so the dough will be more airy and loose.

The dough is poured into the form, utaplivajut in it a coin, wrapped in foil. Bake at 180 degrees for about an hour to dry kindling.

Very delicious cake turned out - soft sweet dough with chunks of toasted almonds and crispy thick crust.

Now Fanouropita. The principle is the same. Raisins (0.7 Cup) pre-soaked in the glass of liqueur or brandy (I was soaked with freshly squeezed orange juice, which is then added to the dough). If you are going to soak in the liqueur, add it. Yolks from two eggs, 100-120 ml of orange juice, 60-70 ml of vegetable oil beat with a mixer for 2-3 minutes.

Separately sift 250 grams of flour with 1 tsp cinnamon and 1 tsp of baking powder. Add the flour into the batter, each time stirring, then add Cup chopped walnuts and raisins, mix well.

Beat egg whites from 2 eggs until stiff peaks and stir into the dough from bottom to top.

To make a wish. Pour the batter into the form lubricated with oil. Bake at 180 degrees for about an hour.

This cake I liked more than Vasilopita. Very loose, porous dough with ground nuts and raisins. Yes, and the desire takes - just a dream!
