Fish under marinade
7 APR great holiday - the Annunciation. And in this day of fasting you can eat fish. While my family members are fasting, I watch interesting fish recipes and test them myself and the younger children. Escabeche is usually fish that was first fried, and then soaked into the marinade. The beauty of this method is that it ennobles even the most simple, the most dull fish like haddock, hake or Pollock. Moreover, it is a kind of fish more than others benefit from this treatment, capitivate delicious marinade. For a basis I took the recipe Nina Niksya, change it a little for themselves.

Ingredients

  • Fish

    500 g

  • Olive oil

    100 ml

  • Red onion

    1 piece

  • Garlic

    2 tooth

  • Green onions

    1 piece

  • Flour

    2 Tbsp

  • Thyme

  • Rosemary

  • Orange zest

    0.5 tsp

  • Orange

    1 piece

  • Dry white wine

    150 ml

  • Vinegar

    150 ml

  • Capers

    2 tsp

  • Brown sugar

    1 tsp

  • Salt

  • Allspice

Cooking

Fish fillets washed and cut into small pieces. You can take any fish (cod, Pollock, etc.). I took the red, although it without the marinade delicious. But it so happened that I got a lot of cheap salmon.

Roll the fish in salted flour, the excess flour to shake.

In a pan heat 2 tbsp oil and fry the fish on medium heat for 5 minutes on each side.

Lay the fish in a deep bowl.

Now make a marinade. Onion and garlic finely chop.

In the pan where you fried the fish, add the remaining oil, onion and garlic. Fry for 7 minutes.

Add the chopped green onions, thyme, rosemary, black pepper. Fry for 3-5 minutes.

Add the zest, orange juice.

Add wine, vinegar.

Bring to a boil and pour the fish.

Once the fish has cooled, put it overnight in the refrigerator. Served either as an appetizer (at room temperature) or heating in a microwave oven as a hot dish.
