Angels... I really wanted to do something on these fabulous, but maybe not the characters. Tales with them, always a little sad, but very bright and good. Actually, the character is already the personification of a fairy tale. So we arrived a couple of angels and settled on the window, and to treat them we decided delicate roulade of chicken fillet, pate, mushrooms and nuts. We wrapped the roll in almond-cheese puff pastry. And finally covered it all, like the wing of an angel, delicate cap of cheese and pistachios.

It all started with the fact that they're angels. It happened late, late in the evening, almost night.
But the kid is not asleep, he was waiting for. And expectations were met, he saw as they flew. After that, the baby soon fell asleep and in the morning began to help her mom cook for the angels treat.
Mother little guessed that the angels would arrive on this day, so I started to prepare the day before. Sliced chicken fillet thin-thin.
And poured his cream (separated into two parts, but leaving the 3 tbsp. for whipping pate). Cinched with cling film and leave in the fridge for a day, to fillet was very tender.
Same with chicken liver, pre-clearing it from the film.
And the next day the liver is put in a refractory form, together with the cream. Added chopped leeks, sliced mushrooms (4pcs.). Seasoned with salt, pepper and nutmeg.
And misted a little brandy, which is in the process of cooking has lost a degree (so that the kiddies can safely eat), but left a wonderful flavor. Put in a preheated 130 ° C oven for 3.5 hours. Occasionally stirred.
Next, put the contents in a food processor and grind up.
In the middle of grinding added a third of the total number of almonds.
And almost at the end - half of the pistachios.
Then began to prepare the dough. This is the favorite pastime of the baby. First rubbed cheese (one-third of the amount) and the remaining shredded almonds, because we need to turn an ordinary puff pastry in a cheese-almond. And it's very simple.
Now the dough was cut into 4 squares. 3 of them sprinkled with cheese and almonds.

And roll with a rolling pin into a thin layer. If it's too thin to roll it out, then stick the dough may tear, so you need to monitor the thickness.
Left the dough to relax a bit, meanwhile cut the remaining mushroom slices and fried them (very briefly) in a small amount of vegetable oil.
On the dough put chicken fillet. It was a gentle, gentle cream. Season fillets to taste with salt, pepper and nutmeg.

And the last layer of pate.
Turn the loaf with the egg yolk and sent in heated to 200 degrees oven for 20 minutes.
While the loaf is baked, grate the remaining cheese and mix it with whipped in a solid foam protein (left from yolks).
After 20 minutes, cover the loaf cheese-protein mixture. We decorated snowflakes from sliced puff pastry. Return to the oven for 5-7 minutes.
When serving, sprinkle with the remaining roll of chopped pistachios and decorate with greens.
