Cooking
Mix the sifted flour and water, salt. Knead homogeneous thick dough and leave on the table under cover for 15 minutes.
Meanwhile, cook the filling. First saute in a small pan of eggs, if boiled, then finely chop. Finely chop the herbs, mix with grated cheese, cottage cheese, chopped nuts and eggs. Salt, pepper and mix well.
Divide the dough into 8 equal pieces, roll into balls. Then each ball on a floured surface roll out into a thin circle with a diameter of about 13 cm and a thickness of 1-2mm.
In the center of each circle put 2 tablespoons of the filling and gather the edges of the tortillas around in a bag, formed round Patty. In the same way create all our mini-kutab. Heat well dry the pan, preferably cast iron or thick bottom, and fry each Patty (without any oil) on each side for 4-5 minutes.
