Once the court clown of Emperor Konstantin Kugel boasted the owner, he's not worse than it can rule an Empire. Constantine liked the idea, and he allowed the jester to rule the Empire one day in the year on 1 April. Probably, and dish it up with the court jester!..

Eggplant cut into strips (not soaked) and fry in a well-heated sunflower oil until well-cooked crust (it is better to fry immediately in the form in which you will bake "Kugel").

While the eggplants are roasting, finely chop the greens

Prepare a mixture of 5 eggs, 2 spoons of flour and a spoon of mayonnaise: the mixture should be well mixed (to look), better to do it in a small Cup with a mixer on low speed

Tomato cut into small cubes along with the skin

Add in the fried eggplant and fry for another 5-6 minutes (to evaporate the juice of the tomatoes)

Then place vegetables on greens

Surface "Kugel" align and put in preheated oven (I cooked in the convection oven at medium fan speed, a temperature of 205 degrees) until tender (check with a toothpick). I was prepared for about 40 minutes.

Girls, do not be afraid of something that on the surface "Kugel", and near the walls of the mold much oil. The oil is then all absorbed into the vegetables! It will be even a little!

The main difference between "Kugel" from our Russian casserole: instead of flour we add milk. But the flour taste completely different, more pronounced (in this case) the taste of eggplant, the other the density of the food, even the smell of the other. Let "Kugel" a little bit to cool down, and then cut. It holds its shape. Looks very nice "Kugel" baked in the muffin tin (and so it gave us Eleanor). It is an independent, very hearty dish. And "Kugel" is actually the sea: potato, bread, Apple, pear, pumpkin, zucchini ... wish I did not know before!... And now I know and told You.
