Soup
Cream soup "Vichyssoise" is a soup made of leeks and potatoes. About his origin there are two versions. One claims that it was invented by a French chef who lived in new York. Second - that the home Vichyssoise, though, is France. This soup has several variations and is served in different ways - cold and hot, with a garnish of cucumbers and shrimp. Having tried all versions, I settled on this one. Hot soup with shrimp.

Ingredients

  • Leeks

    100 g

  • Potatoes

    100 g

  • Broth

    200 ml

  • Cream

    40 ml

  • Salt

  • Butter

    20 g

  • Olive oil

  • Black pepper

  • Shrimp

Cooking

In a saucepan heat the butter and saute in it the chopped leeks

Add diced potatoes, pour the broth and cook for about 20 minutes on small fire, at the end of cooking add salt

Ready soup to blend, adding the cream and RUB through a sieve for a creamier consistency

Heat soup, pour into bowls or cups, sprinkle boiled shrimp, rings of leek, sprinkle a few drops of olive oil and sprinkle a little black pepper. Voila!
