Soup
Soup "Grandfather" or "old Man" is prepared in the cold season. Very often instead of beef bones and bacon when it is cooking, use the giblets. In the economical option — the soup included cabbage, potatoes, garlic, spices. In more generous — add sausage or bacon. I like it it reminds me of our Russian cabbage soup. It was very tasty and satisfying!

Ingredients

  • Sauerkraut

    700 g

  • Bones

    500 g

  • Bacon

    200 g

  • Potatoes

    700 g

  • Carrots

    150 g

  • Onion

    150 g

  • Vegetable oil

    3 Tbsp

  • Bay leaf

    2 piece

  • Black pepper

  • Salt

  • Garlic

  • Thyme

    1 Tbsp

Cooking

Bone rinse well and place in 5 quart saucepan, cover with cold water and put to boil. To remove the noise, reduce the heat and cook for 1 hour.

Add the cabbage (if you have it is very sour, always rinse it with cold water and add 1 tablespoon of sugar) and cook for another 20 minutes (it all depends on the hardness of the cabbage and your preferences, I don't like the cabbage soft)

In a separate pan cook the potatoes and not pouring the broth to crush it, leaving the pieces. Add it with the broth to the soup.

Onion and cook in heated oil 2 minutes, add grated carrots and sauté for 2 minutes. Bacon cut into strips and add to carrots and onions, sauté. Enter everything into the boiling soup. Add Bay leaf, pepper and herbs, cook for 1-2 minutes and turn off the heat.

Serve with meat chops, peppers and onions. If you like, add sour cream.
