In the small mountain village of Tajikistan keep age-old traditions. Therefore, the recipes of old dishes passed down from generation to generation. "Oshi burida" – the favorite food of all villagers. It is not only delicious but also very healthy dish. The more green, the better. By the way, weakened after the disease people recommend is "Oshi burida", as this dish is diet and rich in vitamins.

Ingredients

  • Chickpeas

    1 cup

  • Water

  • Salt

  • Vegetable oil

  • Flour

  • Carrots

    3 piece

  • Onion

  • Garlic

  • Greens

  • Apricots

    4 piece

  • Black pepper

  • Yogurt

Chickpeas soak overnight in water and boil until tender.

Start kneading the dough. To rest.

Greens wash, dry and finely chop. The greens in "Oshi burida" put as much as possible – nearly 12 varieties. I have so many, unfortunately, were not. It is compulsory - mint and cilantro. Generally, cilantro is probably one of the most used herbs in Tajikistan.

The dough is rolled into a roll and cut into thin noodles. Right to cut the noodles is an art. Strips of dough should be very thin and long. This is taught from early childhood. But not every owner can reach the top skill.

In a pan, add the chickpeas, chopped dried apricot, rosemary, thyme, sage. Cover with water and bring to boil. Season with salt and pepper.

Add the noodles. When the noodles are ready, put the greens. To turn off the stove.
