Pumpkin pie-scrambled eggs
This is the only dish with pumpkin, which my husband was absolutely delighted, so thanks to the competition "Bright mood" we are starting to win. Indeed, this pumpkin loaf turns out very tender, juicy, so I prepared it more than once, and with toppings you can experiment with.

Ingredients

  • Pumpkin

    300 g

  • Chicken egg

    3 piece

  • Cream

    3 Tbsp

  • Flour

    1 Tbsp

  • Onion

    1 piece

  • Mushrooms

    3 piece

  • Beef liver

    100 g

  • Cheese

    50 g

  • Salt

Pre-boiled (or steamed in water) 150 g pumpkin, cool and RUB through a sieve. For the filling, chop and fry in vegetable oil onion, add grated on a coarse grater pumpkin, saute a little, add chopped boiled liver (can also be grated), salt, season with spices and turn the heat off.

For scrambled eggs beat with a mixer eggs, add the cream, pumpkin puree, flour, salt and a little beat up.

Pour on a heated, oiled pan and fry on low heat on one side. I want to clarify that I have a big frying pan (28 cm in diameter) if you use a small frying pan, the better the mixture is divided into two parts and make two omelets-roll.

At the ready, slightly cooled the eggs, put the stuffing.

An omelet pancake is very tender, so no effort is not worth it to roll it into a log, except that the filling is a little on the sides may fall out, then push it back. Put the strudel on a baking sheet (to avoid wasting time washing, it is desirable to spread under the roll of foil or baking paper) and put in a preheated 180 degree oven for 10-15 minutes so the loaf is warmed and cheese has time to melt.
