Pork is better to take with a little fat (my neck). Pork should be cut into strips of a width and a thickness of 5 mm. Better and easier to do it when the pork is slightly frozen. P. S. Work on cutting laborious but not so difficult. Although some stripes I got a little more width and thickness than 5 mm.

Make a marinade. For this you first need the stems and roots of the cilantro, peeled garlic cloves and white pepper pound in a mortar. As I have no mortar, I crushed the processor cilantro (stems with roots) and garlic.

Then in a bowl you need to add cane sugar, fish sauce, oyster sauce and soy sauce. Mix well. The marinade is ready.
