Cooking
Make the sponge cake:separate the whites from the yolks, beat the whites with a pinch of salt. In another bowl beat the egg yolks with 2 tbsp of water,125g. sugar, vanilla, zest, baking powder, whisking until the sugar is dissolved. Spread the beaten egg whites to yolk mass, top sift the flour and starch, all stir manually with a whisk or spoon, pour the batter into greased pan 28cm. bake for 20-25min. in preheated to 180° oven.
Take any berries (I used blueberries, blackberries, raspberries, strawberries)800gr. to fill them in a saucepan with 200g. sugar, heat until hot, but to boil not to bring, leave them on for 10-15 minutes
Then drain them of excess juice, but not all, leave on the bottom. 25gr. gelatin soak in cold water for 10min, squeeze to drain the water, dissolve a few seconds on the fire (but in no case do not bring to boil), to enter gelatin to berries, leave to cool until barely warm
Cut the cooled cake into two pieces to make the cake, whisk 150gr. cream (you can use sour cream, but not runny), add some of the juice that is drained from the berries, mix gently
One cake to put in a detachable form, to smear creamy mass, spread fresh berries or fruits, cover with the second cake layer and lightly compacted on top, pressing down palms
750 gr. cream (very cold, you can cool down 30min. freezer)beat until fluffy thick mixture, put in them from the berries and very gently (so the berries didn't bloody finally, and the cream is not settled) to mix, to interfere need with tenderness))then mousse get 100% delicate and airy
Put the whole mass into shape, on top of the cake, place in refrigerator
In the remaining juice to dissolve a bit of gelatin.. to 100g. 2-3 g. gelatin in an hour the cake can be decorated with berries and pour the juice.
Oh, what a delicious cake.. I make this often, especially in the summer season.. well, in winter, from the frozen berries. For me it's just the king of all desserts)))Very highly recommend
