This recipe gave me my friend Olga, so in her honor. Spicy, spicy eggplant. Though the season is over, but maybe someone will have time to make such takatoku. The recipe is the original, below my Appendix.

Cooking
Eggplant wash, cut into slices (approximately 0.5 cm). If the eggplants are bitter, then soak them in salted water for 30-40 minutes, then squeeze.
Peppers and garlic, peel and mince.
Eggplant fry in a pan with two sides.
In sterilized jars (0.5 l) layers stacked eggplant and peppers. Then in each jar put: 1 tsp salt and 2.5 tbsp sugar, 3 tsp 9% vinegar. Fill with boiling water.
Cover with lids and put to sterilize in a pot of water. On the bottom of the pan be sure to put a rag or thin towel. Pour water up to the shoulder of the jar. Sterilize them 10 minutes after boiling water.
Carefully remove jars, roll up. Banks flip on the lid, wrap a blanket and leave until cool. Bon appetit!
PS:I did last year, and this has made some changes. The salad was sweet for me, although when it was served to me everything was fine, maybe the whole thing in the Sahara? Therefore sugar at this year put less. The eggplant was cut into circles, very uncomfortable to eat them because torn. Cut these decent cubes (eggplant into 8 parts, if the big 10). Added roasted bell pepper and chopped fresh herbs (dill, Basil). It turned out insanely delicious, the first jar went to CHEERS!. So to capture this moment in time. I promise to improve. Love all sorts of Goodies, so don't be afraid to try, something to change and add. If you are not afraid of something new, then try to cook, I think you will like it!
