Roll with cheese and eggplant
I love cheese dishes, but the sweet casserole was a little bored and wanted something salty. Fortunately, came across a pita and in my head began to emerge a simple recipe. Recipes of various rolls of pita on the site a lot, but I seem to have been found. The recipe was created in the cooking process, so here I post already adjusted the proportions. The result is a delicate and hearty snack which can be eaten both hot and cold. P. S. immediately apologize for the photo quality))

Cooking

step-0
Peel the eggplant, cut into small cubes, season with salt, add herbs and/or seasonings and fry in the pan. I made with ground dried mushrooms. You can add soy sauce or a little broth if the eggplant turn out very dry. Eggplants are ready remove from heat and set aside. Pepper wash, peel and cut into small cubes. If you want the filling was soft, you can stew the peppers in the pan along with the eggplant. I like it when the peppers crunchy, so I left it raw.
step-1
Eggs lightly beat with a mixer or whisk, add the cheese, mix thoroughly. I fluffed all the mixer - so the cheese is more delicate and smooth. Add salt to taste, herbs (I had parsley, a little dill and Basil). There also add eggplant and pepper. Mix well.
step-2
On a sheet of lavash to spread the filling and roll it roll. I had two sheets of lavash somewhere 30х60см. Sheet or form for baking grease with vegetable oil and put the rolls. Grease with sour cream, sprinkle with sesame seeds and put in the oven at 180 degrees for 15 minutes.
step-3
Hot rolls sprinkle with grated cheese and return to the oven for another couple of minutes. I lightly browned them in the grill. The food is ready. Then they only have to cut and try) the First roll we flew literally in the process of tasting, I didn't even have time to photograph the finished dish))
