Description
Once in Italy, wheat flour was scarce, expensive product. Especially in the Renaissance and in the 19th century, and again during the Second world war. After the discovery of America Italy learned of a cheaper raw material from which it was possible to obtain flour, the corn. Corn in the dough added a little honey whole wheat flour and it turned out soft, fluffy and delicious bread. Adding the same dough of sugar and raisins, was already released delicious pie. So "poor kitchen" was just the same haute cuisine or High cuisine. I suggest one of the simple recipes for delicious corn cake with plums. This recipe is going to give the Lyuda, Lyudmila Novos - fishing.

Cooking
The original recipe uses apricots, now we have them not, not a season and make a pie I really wanted, I decided to do with plums. I have plums in light syrup. Recline the plums in a sieve (colander) to drain the fluid. If you do with fresh fruit, simply remove seeds and cut into halves or quarters (depending on size).
Almonds using a blender to grind into flour. In a bowl pour the sifted wheat, maize, almond meal and baking powder.
Take brown sugar fine from "Mistral".
In a container for whipping put the butter room temperature and sugar, beat with a mixer until creamy. Baking is moderately sweet. For my taste of sugar need to take a couple of spoons more.
Add the grated zest from one lemon and 2-3 tablespoons of dry ingredients, stir after each addition.
If the dough is too thick, add milk. The dough should be relatively thick to plums (apricots) did not sink.
Take the form on 22-25 cm, I have silicone. If the form is metal, then brush with oil. Put the dough, level, put on top of the plums (or apricots). Press them lightly into the dough. Put in preheated to 180-200 degrees oven for 30-40 minutes.
Give the finished cake to cool in pan 30 minutes. Get their shape.
Sprinkle the top with icing sugar. The pie is delicious, both warm and cold. Enjoy your tea!
