Cooking
The taste of the soup depends on the quality of the broth, so I cook it in advance, without haste: half chicken, pour cold water, bring to a boil, remove foam and cook on low heat for about 2 hours, add the vegetables 30 minutes before the end of cooking. Broth strain, add salt and leave the next day. To prepare onion soup should be very little onions and the broth, well, just a little more.
Use large white onion, it's juicy and delicious. Cut into strips and protrusive in a saucepan in olive oil until soft, about 30-40 min.
For a few minutes before the end add the flour, stir, fry.
Onions pour broth, cook for 20 min. Add the wine, salt, spices, aromatic herbs, bring to taste.

Ready soup poured in portions of ceramic bowls, cover with a slice of bread, liberally sprinkle with grated cheese and put in oven for 10 minutes to brown the cheese.
