Cupcake tomato
Very simple and delicious muffin on the tomato juice and no eggs. Cooked for the first time, and the result exceeded all expectations. This recipe is not found on the website here and decided to share. Rather, help yourself

Ingredients

  • Tomato juice

    200 ml

  • Soda

    1 tsp

  • Sugar

    1 cup

  • Vegetable oil

    10 Tbsp

  • Flour

    11 Tbsp

Cooking

A glass of tomato juice or a tablespoon of tomato paste dissolved in a glass of water

Add a teaspoon (no slides) of soda. Whisk (there is the effect of quenching of soda, because the tomato is acid)

Add a Cup of sugar, beat

Heat 10 tablespoons of vegetable refined oil. The hotter the oil, the softer will be the cake. I heated nearly to boiling. A bowl is better to take an enamel (I changed), since with the infusion of hot oil in the glass, dishes can burst. Stir to dissolve the sugar.

Gradually add the flour (tablespoons with slide) and knead well. The dough should be soft, but not liquid.

In a greased and floured muffin tin to lay out the dough (I shape diameter 24 cm)
