Vietnamese soup
In the winter of delicious hot soup is what the doctor ordered! Aromatic, rich taste of shrimp and spices, the broth excellent and the noodles to it - a great and hearty addition! To say that it is delicious - nothing to say! The soup is incredibly delicious and warming! I recommend wholeheartedly!

Ingredients

  • Shrimp

All the necessary products. If frozen shrimp are used, they must be pre-thawed. Onion, garlic and carrot peel. Oil you can use any, I have olive.

Clean the shrimp, cleaning shrimp (head, shell) in a bowl (we will need is the main ingredient of the soup), the shrimp in another plate. Shrimp in the ingredients list provided in the minimum quantity (weight) required to prepare the broth. You can use more than more peelings from the shrimp, the broth will be richer. Be guided by your taste. In the bowl of soup when serving, add the shrimp also taste.

Vegetables (onion, carrot, garlic) cut into arbitrarily small pieces.

In a saucepan heat the oil and over high heat fry the vegetables (onion, garlic, carrot) for 5-10 minutes.

To the vegetables add the spices - star anise, cloves and peppercorns and fry, stirring constantly, also over high heat for 2-3 minutes.

Add to the pot with the vegetables and spices to clean the shrimp, stir and fry for another 5 minutes.

Pour contents of the pan with cold water (2 liters), stir, close with a tight lid and over high heat bring to a boil. After the broth boils, reduce the heat to low and cook under cover on low heat (but the broth needs to simmer) for 1 hour. Cooking can be longer, the longer the cooking the broth so it tastes better.

While cooking the broth, boil the rice noodles according to the instructions on the package. If the shrimp are fresh they should also be boiled. Frozen shrimp I boiled, because they are frozen already cooked.

Ready broth is filtered well through several layers of cheesecloth. Add soy sauce and salt and again bring to a boil.

In a bowl put cooked noodles, and top with shrimp, parsley, green onion and chili pepper. (careful in the hot broth it becomes even sharper).

Pour the contents of dish with boiling broth, seasoned with lemon juice as desired and to taste and soup is ready! Serve immediately and enjoy immediately!
